Okay, I’ve had a few questions about how I made these. So here’s a quick & dirty recipe. Here’s the original post.
Ingredients:
- 1 lb of lean ground beef. I prefer ground sirloin, so that’s what I use.
- 1 can of black beans
- 1 jar (about 12 oz.) of salsa. I like Whole Foods’ 365 mild salsa. It is what I used in this recipe.
- 3/4 package of shredded cheese. I used a “Mexican” four-cheese blend. Sharp cheddar would also be quite tasty!
- Hard taco shells or tortillas (whatever your preference might be)
- Toppings: lettuce, pico de gallo, sour cream. Go wild!
How to:
- Brown the groundmeat in a skillet on medium-ish heat. Drain in a collander.
- Put back into the skillet. Add the black beans and salsa. Lower heat a bit to medium low.
- Cook until groundmeat is completely cooked through and beans are well heated. The salsa juice will bubble and boil a bit.
- While all this is cooking, be sure to heat your tacos, tortilla wraps, or whatever you’re going to put this in.
- When all ingredients are cooked, add in the cheese. Stir until cheese is melted and blended with dish. It will take on an orange-y look.
- Place filling into taco shell. Add toppings. Being the wild woman that I am, I ate this with just lettuce.
It made for a quite yummy dish. Enjoy!
