In South Louisiana for Easter weekend, my family does one of two things for a meal: boil seafood or BBQ. Since boiled seafood appeared at the Good Friday lunch, BBQ was on the menu for East Sunday dinner. And per usual, my mom sent me home with some lovely leftovers. Though I wasn’t happy while packing the bento this morning, I am happy with it now. I didn’t like the looks of it at first, but after I took the picture and looked again, I’ve decided it’s not the worse (nor is it the best). It’s good enough for this morning.

Last night, I decided I wanted to make a cheesea nd avocado quesadilla with half of the avocado I had purchased. The only issue is that everytime I’ve tried to make a quesadilla it hasn’t worked out quite right. Off I went to figure out what I was doing wrong, and then I found this little jewel of a recipe at Simply Recipes. It worked like a charm and made an amazingly good tortilla. And I’m still trying to figure out how my tortilla had a slightly butter taste to the outside when all I used was a wee bit of olive oil in the pan to cook the tortilla. Weird, but way good.

Tomorrow is my first day back at work after the Easter break. I have currently got some red carmarge rice in the cooker so I’ll blog it later when it’s ready
I’m going to have to look up what type of rice that is. I was browsing through the latest edition of Bon Appetit at lunch yesterday. There was an article on all these different types of gourmet rice types. I never knew there were so many other types. The red varieties looked cool.
I think i made the cutest box I’ve ever made today: I did the little deviled egg chickies. I also had a quinoa salad and apples, celery and peanut butter. I would have had some wild mushroom couscous, but my fool cat actually ate the couscous I’d put aside to cool for my lunch! (Fool cat… I’ve seen him try to jump on the counter for tuna, but couscous? He’s a cat!)
I also made a little snack bento for my hubby for the library.
I like this challenge. It’s fun!
I love how you packed your tiffin box. It’s awesome. Ooohh, sneaky cat too! But you know, dogs are sneaky too! My two have snuck off with pats of butter before (normally when my back is turned while cooking).
