Woohoo! I have something cooking today. Slow-cooking that is, so I’ll have something to eat when I trudge home this evening.
Yesterday, I stayed home from work to rest, take lots of meds, and try to finish getting over whatever bug I seem to have caught. That plan of actions seems to have worked. I feel a bit hungry this morning and all in all in much better shape.
Today is the 2nd Wednesday of the month for me, which means the monthly all-day meeting. This includes going out to lunch with co-workers.
While I’m at work today, my slow-cooker will be working on a pork tenderloin using a Betty Crocker recipe: 1 pork tenderloin salted and peppered then browned in a skillet, transfer to slow-cooker and add 1 onion thinly sliced, 2 tablespoons of minced garlic, and 1 cup of root beer. When I come home, the pork tenderloin should be finished cooking. I then will just have to shred it and heat it up with some BBQ sauce. Then I’ll have pulled pork to eat. YAY! I plan to freeze some of it for later use as well.
I plan to have a BBQ pulled pork bento on Thursday. I just haven’t figured out my side dishes yet. I’m feeling like some cornbread might be needed. Yes, indeedie.
Gahhh, is pulled pork that easy to make? *searhes for a slow cooker to buy* and ROOT BEER, my lord that sounds delicious!
