Lunch: Spaghetti & Broccoli

Baked Spaghetti - Day 2 (1 of 2)

I have the day to myself.  I made the same thing for lunch today (pretty much) that I did yesterday.  I want to post, but I don’t want to be totally boring…so what’s a blogger to do?  Well, I take different pictures and see how those come out!  LOL!  Today, I took the rest of the spaghetti sauce and some boiled noodles from yesterday to make baked spaghetti for lunch again today.  The top of it came out so wonderfully, nommy nom nom beautiful I had to take a photograph.  Wait.  Let me rephrase that.  I stood in front of the oven, peering in, until it got just at the point I wanted.  Then, I whisked it out of the oven and set everything up to take the photograph.  I just got luck that cheese browned up so perfectly.  Egads, this was a good lunch.

To make the meal slightly different from yesterday and to add to some greenery to the scene, I added some roasted broccoli to the mix.  This was so super easy.  The spaghetti baked while the broccoli roasted (all set on 400 degrees).  They were done nearly at the same time.  Oh my.  Oh my oh my oh my.  So good.  So delicious.  And so already gone.  I have enough baked spaghetti for either lunch or dinner tomorrow.  However, it is I wish to dish it up to myself.

      I give all the credit for the roasted broccoli to The Feisty Foodie. I found it through her blog, and I think she linked to someone else. I don’t like broccoli, but I gladly eat it this way. It’s overly tasty, and I highly recommend you try it! I hope you like it.
