Yesterday, Thanksgiving was spent with my mom’s side of the family, which is a sizable group. It was quite the spread, and the spread was very nearly wiped out. While there was food to bring home, I didn’t end up doing so. That left me without lunch today.
Enter these carrot pancakes. I seem to have an overabundance of carrots in the fridge for some reason. I mean I like them and all but sheesh! I found a recipe for these and decided they were in order to use up the carrots and have some lunch. A few deviled eggs and some quinoa scramble (modified from recipe here) completed the meal.
Verdict? Good stuff. There are a few issues with the recipe that I would need to fix for next time, but rest assured, there will most likely be a next time. I’ll process photographs and post the recipe in a week or two (b/c I already have a recipe that is posting this Sunday: Chicken & Pine Nut Mini Burgers, remember those?)
