So healthy and simple and delicious looking. I'm actually not an eggplant fan at all, but your recent posts have reminded me to maybe give them another try. So many of the memories I've made of foods I don't love came from when I was a child and my tastes have changed so wildly since then, I have to remind myself that those foods might taste completely different to me now. I'm going to try this with eggplant soon, and honestly, I can't see why it wouldn't be delicious! Thank you for sharing this inspiring experiment. That is just mouthwateringly beautiful.
